Ingredients:
  • Spinach - 1 big bunch, washed and finely chopped
  • Oil - 3 tbsp
  • Onion - 1 medium, finely chopped
  • Potato - 1 large, boiled and cubed
  • Tomatoes - 1-2, chopped
  • Cumin seeds - 1 tsp
  • Green chilies - 1-2, slit lengthwise
  • Garlic paste - ½ tsp
  • Cumin powder - ½ tsp
  • Coriander powder - ½ tsp
  • Turmeric powder - a pinch
  • Salt - to taste
  • Coriander leaves - chopped
Method:
  • Heat oil in a pan, add the cumin seeds and let it splutter
  • Add the onions and fry till it changes to light brown in colour
  • Add the green chillies and the garlic paste and fry a bit
  • Add the tomatoes, cumin and coriander powders. Cook until the tomatoes are soft and mushy and the oil separates
  • Next add the spinach, give it a stir. Cover and cook, giving it an occasional stir every few minutes
  • Add the potatoes
  • Cook it for about 10 minutes. Add water to help it get done if it dries up too quickly
  • Once done, garnish with coriander leaves and serve
